Executive Chef Peter Gilmore joined Quay in August 2001 and is ranked one of the country’s most talented Chefs. Peter’s food is a celebration of nature and its diversity. Peter works closely with farmers and providores to source and develop beautiful produce. Working with people like Richard and Nina Kalina to source seeds for heirloom and rare vegetables which are grown organically at their farm in the Blue Mountains two hours west of Sydney is just one example of his determination and dedication to give our customers a unique nature based cuisine. Quay has been consistently ranked at the top of the Australian dining scene by both the Sydney Morning Herald’s Good Food Guide and Australian Gourmet Traveller Magazine. Peter’s mission is to harmonise flavours and textures to create an exciting and sensual dining experience. Quay’s location with its birds eye view of one of the most stunning harbours in the world combined with professional and caring service and an extensive well crafted wine list, featuring Regional Australian and World wines, completes the Quay package.
