Tables for two are in high demand and are usually the first to book out. Tables for four are more readily available. If your requested date is unavailable, gather friends or family for a table of four.

Guests can certainly request tables but unfortunately, we cannot guarantee as we allocate on the day according to table configurations and booking date.

If you have any dietary requirements, please mention these when making your reservation.

Available exclusively at Quay, Quay Botanic Gin is a collaboration between Peter Gilmore and Yarra Valley-based Four Pillars Gin.

The small-batch gin was distilled as part of Four Pillars Experimental Series with Peter visiting head distiller, Cameron in June this year to select and distil the botanicals which give this gin a beautifully pure and intensely botanical flavour.

As always, Peter champions locally sourced produce and has included fresh lemon leaves, fennel, basil, mint and limes from Cameron’s garden in the botanical list. Taking cues from the surrounding Australian flora and fauna, other botanicals include desert limes, cinnamon myrtle and bee pollen.

The results is a dry style gin with a big depth of flavour, really bright citrus and a chewy fennel character. These notes are emphasised in the signature Quay Botanic Gin cocktail created by Taka Shino with a dry tonic, lemon, basil and bee pollen complementing the flavours of the gin.
